Three Holy Women 2009 Trip to Padibe

Hey everyone!  We were THRILLED to visit Padibe in November 2009.  We have so many good memories and we met so many wonderful people that it’s hard to describe.  Thanks to Tommy, Vincent, Fr. Romano, Noah, Denis, Sr. Judith, all the sisters an, the Global Solidarity Committee and all the parishioners of Padibe for making us feel so incredibly welcome.  Padibe is our second home.  We’re already talking about coming back.

War Is Never Good News

A brief reflection presented by Archbishop John Baptist Odama during a press conference with journalists from Gulu District on June 20, 2008

War is never, never good news for humanity.

Its children are:

Death, destruction; it destroys what it claims to defend or save

Loss of property, misery, madness/nonsense, dehumanization, destruction of human life, fear, falsehood, counter accusations, broken relationship, self-defeat of humanity, hatred, anger, revenge, mistrust, trauma, etc.

Those who intend and plan to go to war or have started war must know that the cry of the innocent like babies, children, their mothers, the elderly indeed the majority will reach God.

Those architects and contractors of war will have to be accountable, first witnesses against themselves, in front of God and Humanity

Let reason, trust, hope, courage and love, dialogue triumph to save the sacred and precious human lives in every country.

Recipe: Malakwang in Peanut Sauce

1-2 lb sweet potatoes
1-2 lb leafy greens (try kale, collard greens, spinach, or chard)
1 tomato, chopped
1 onion, finely chopped
2 cups cold water
1 1/2 cups natural peanut butter (no sugar or oil added)
salt, pepper, and red pepper flakes to taste

Peel and cook the sweet potatoes (steam, bake, or boil) until they are soft.

Meanwhile, remove any tough stems from the greens, chop the leaves coarsely, wash the leaves, and throw them into a large pot while still wet.

Cover the pot and turn on the heat.

Cook until the leaves are wilted, stirring occasionally. (If you use frozen greens, cook them until thawed.)

Add the cold water, tomato, and onion and simmer for 10 minutes.

Stir some of the hot vegetable cooking water into the peanut butter and then add the resulting peanut butter sauce in with the vegetables.

Add salt, pepper, and red pepper flakes to taste.

Serve with the cooked sweet potatoes
